Breakfast Burritos

Simple Breakfast Burritos (Meal Prep Friendly)

Ingredients:

  • 1 dozen eggs

  • 1–2 lbs ground beef

  • 5–7 tortillas (Vista Hermosa for seed oil free flour tortillas or Siete for gluten free)

  • Salsa

  • Cheese (We use Organic Valley Raw Cheddar)

  • Cottage cheese and avocado (for serving)

  • Seasonings of choice (salt, pepper, garlic powder, etc.)

Instructions:

  1. Cook the filling:

    • In a large pan, brown the ground beef until fully cooked.

    • In the same or a separate pan, scramble the eggs.

    • Season both with salt, pepper, or any favorite seasonings.

  2. Assemble the burritos:

    • Lay out 5–7 tortillas.

    • Add a scoop of eggs, ground beef, salsa, and cheese to each tortilla.

    • Roll each one tightly into a burrito.

  3. Store:

    • For the week: refrigerate burritos in an airtight container.

    • For longer storage: wrap individually in foil or parchment and freeze.

  4. Reheat:

    • Keep burrito wrapped in foil and warm in the oven at 350°F for 10–15 minutes, or until heated through.

    • This helps prevent the tortilla from burning.

  5. Serve:

    • Enjoy with cottage cheese, avocado, or any toppings you like!
