Simple Breakfast Burritos (Meal Prep Friendly)
Ingredients:

1 dozen eggs

1–2 lbs ground beef
-
5–7 tortillas (Vista Hermosa for seed oil free flour tortillas or Siete for gluten free)

Salsa
-
Cottage cheese and avocado (for serving)

Seasonings of choice (salt, pepper, garlic powder, etc.)
Instructions:

Cook the filling:

In a large pan, brown the ground beef until fully cooked.

In the same or a separate pan, scramble the eggs.

Season both with salt, pepper, or any favorite seasonings.

Assemble the burritos:

Lay out 5–7 tortillas.

Add a scoop of eggs, ground beef, salsa, and cheese to each tortilla.

Roll each one tightly into a burrito.

Store:

For the week: refrigerate burritos in an airtight container.

For longer storage: wrap individually in foil or parchment and freeze.

Reheat:

Keep burrito wrapped in foil and warm in the oven at 350°F for 10–15 minutes, or until heated through.

This helps prevent the tortilla from burning.
