Hearty One Pot Beef Stew Loaded with Vegetables

Ingredients:

  • 1 tbsp beef tallow or olive oil

  • 3–4 lbs beef stew meat (chuck roast, cut into 1-inch pieces)

  • 5–10 carrots, chopped

  • 1 beet (golden or red), chopped into 1-inch pieces

  • ½ green cabbage, chopped (optional)

  • 1 (28 oz) jar diced tomatoes

  • 1 medium yellow onion, diced

  • 3 cloves garlic, minced

  • 1 (4 oz) can green chiles

  • 1 tsp ground cumin

  • ½ tsp paprika

  • ⅛ tsp ground mustard

  • 1 tsp dried oregano

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp chili powder (optional — omit if you prefer mild)

  • Salt and pepper, to taste

  • 1 tbsp tapioca or arrowroot powder (for thickening)

Directions:

  1. Brown the meat:
    Heat beef tallow or olive oil in a large cast iron or heavy pot over medium-high heat for 2 minutes. Add the beef in a single layer and brown on both sides, about 2–3 minutes per side. (You may need to work in batches.) Remove the browned meat and set aside — it’s fine if it’s still pink inside.

  2. Saute:
    In the same pot, add the onion and cook until translucent, about 3–4 minutes. Stir in the garlic and cook for another 30 seconds.

  3. Simmer the base:
    Return the beef to the pot. Add diced tomatoes, green chiles, and all seasonings. Stir well and bring to a boil, then reduce to a simmer. Cover and cook for 45 minutes.

  4. Add the vegetables:
    Add carrots, beet, and cabbage (if using). Simmer for another 20–30 minutes, or until the vegetables are tender.

  5. Thicken the stew:
    In a small bowl, whisk 1 cup of hot cooking liquid from the pot with the tapioca or arrowroot powder until smooth. Pour the mixture back into the stew, stirring until it thickens slightly, about 3–5 minutes.

Finish and serve:
Taste and adjust with salt and pepper as needed. Serve as-is, or pair with rice cooked in bone broth and a dollop of cottage cheese for a hearty, high-protein, nutrient-dense meal.
